hOme.beardedDonkey - Recipe: Satay Chicken
Recipe: Satay Chicken
My wife made this tonight and it is fantastic. 5 stars! Note that she slightly modified the recipe from the original, which is linked to below. All credit to the original author (?) of the recipe.

Source: www.bestrecipes.com.au
Servings: 4 large size
Cuisine: Malaysian, Asian
Course: Dinner
Cook Time: prep: 15 min / cook: 20 min / total: 35 min
1 onion, diced
1 clove of garlic, crushed
1kg chicken breast or thigh fillets, sliced
1 tbsp soy sauce
2 teasp curry powder
5 tbsp peanut butter
2 teasp Worcestershire sauce
3 teasp brown sugar
2 tbsp sweet chili sauce
2 cups hot water
1 red capsicum, sliced

1. Fry onion, garlic and capsicum in a little oil
2. Add chicken and fry for a minute
3. Add soy sauce, curry powder, peanut butter, Worcestershire sauce, sugar and chili sauce
4. Add hot water and combine
5. Simmer for approximately 20 minutes until chicken is cooked

Notes: The sauce will thicken as it cooks, watch it doesn't stick to the bottom of the pan. It needs stirring regularly. Serve with rice and optional side of steamed greens.

You can also probably make this dish spicy by adding some chili flakes or chili powder. The dish is not spicy at all as the recipe is.

This recipe tastes just like an old sachet mix sold in Australia by a company called Continental. The sachet flavour was called "Creamy Malaysian Satay". I remember this distinct flavour as it was our family's favourite meal for years and we ate it almost every week. The sachet mix is no longer produced or sold to my knowledge.
Main Ingredient: Chicken

Sounds great and not so difficult. Thanks.
